Time and Eon Waiting List
Solera Wines
The literal definition of “solera” is a base, or a foundation of support. Solera is a process for aging liquids, such as wine, by fractional blending in a way that the finished product is a mixture of ages, with the average age gradually increasing as the process continues over many years.
Time Allocation - 100% Cabernet Sauvignon
Time (noun) /tīm/: the indefinite continued progress of existence and events in the past, present, and future regarded as a whole.
Time is a magical blend of multiple consecutive vintages of estate-grown reserve Cabernet Sauvignon. This unique creation captures the subtle nuances of time-aged wines with the vibrant exuberance of young wines, all in a single bottle. Each release embodies the essence of all the vintages that came before, with the first year added to the solera being 2005. This offers an unparalleled sensory experience that may even give you a glimpse into the future.

Eon Allocation - 100% Syrah
Eon (noun) /ˈēən,ˈēˌän /: from the Greek aiōn ‘age’
an immeasurably or indefinitely long period of time
Our journey to create an unprecedented Syrah began in 2014 when we set aside our finest barrel of Porter Estate Syrah. A year later, the 2015 vintage was incorporated. This process was repeated for all subsequent years. Our ambition is to create a multi-vintage wine that expresses the layers of complexity and depth of an aged wine, coupled with the freshness and fruit provided by the new vintages.
