Our wines are handcrafted in small, 2-ton lots in the in-cave winery. Each lot is made up of grapes from particular sections of the vineyard, differentially harvested based on ripeness, flavor and tannin development. After fermentation, extensive tastings are performed to blend complimentary lots together during various stages of aging. Barrels are selected to compliment the flavors in the wine, provide the right amount of oxygen, and impart desirable characteristics, such as vanilla, toast, and oak tannins during the aging process.
